Ingredients

  • 2 large Carrots
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 1 medium Zucchini
  • 2 cups Broccoli florets
  • 2 cups Cauliflower florets
  • 1 cup Cherry tomatoes
  • 1 cup Olive oil
  • 0.33 cup Red wine vinegar
  • 2 tablespoons Lemon juice
  • 3 Garlic cloves, minced
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 tablespoon Honey
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Wash all the vegetables thoroughly under running water and pat them dry.

Step 2

Peel the carrots and slice them diagonally into thin rounds.

Step 3

Cut the bell peppers into thin strips, discarding the seeds and cores.

Step 4

Slice the zucchini into half-moons about 1/4 inch thick.

Step 5

Blanch the broccoli and cauliflower florets by placing them in boiling water for 2 minutes, then transferring them to an ice bath to stop the cooking process. Drain well.

Step 6

Add the carrots, bell peppers, zucchini, broccoli, cauliflower, and cherry tomatoes to a large mixing bowl.

In a separate smaller bowl, combine olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, dried basil, honey, salt, and black pepper. Whisk until well emulsified.
