  • 2 pounds Yukon Gold potatoes
  • 6 slices Thick-cut bacon
  • 1 medium Yellow onion
  • 0.5 cup Chicken or vegetable broth
  • 0.25 cup Apple cider vinegar
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Chives (optional)

Directions

Step 1

Scrub the Yukon Gold potatoes clean. Place them in a large pot and cover with cold water. Add a pinch of salt to the water and bring to a boil over medium-high heat.

Step 2

Cook the potatoes until they are fork-tender, about 15-20 minutes. Drain and set them aside to cool slightly. Once cool enough to handle, peel the potatoes if desired, then slice them into 1/4-inch rounds.

Step 3

While the potatoes are cooking, dice the bacon into small pieces. In a large skillet over medium heat, cook the bacon until it is crispy. Remove the bacon with a slotted spoon and transfer to a plate lined with paper towels. Leave about 2 tablespoons of the rendered bacon grease in the skillet.

Step 4

Finely dice the yellow onion. Add it to the skillet with the reserved bacon grease and sauté over medium heat until softened and translucent, about 3-4 minutes.

Reduce the heat to low and stir in the chicken or vegetable broth, apple cider vinegar, granulated sugar, Dijon mustard, salt, and ground black pepper. Stir well to combine and let the mixture heat through for about 2-3 minutes.

Add the sliced potatoes and crispy bacon to the skillet. Gently toss everything together until the potatoes are well coated in the dressing. Be careful not to mash the potatoes.

Step 7

Remove the skillet from the heat. Sprinkle the potato salad with freshly chopped parsley and optional chives for added flavor and color.

Serve the German potato salad warm. It can also be enjoyed at room temperature and makes for excellent leftovers when refrigerated.
