Ingredients

  • 2 cans (13.5 oz each) Full-fat coconut milk
  • 8 pieces Medjool dates (pitted)
  • 2 teaspoons Vanilla extract
  • 0.25 teaspoons Sea salt
  • 1 cup Pecans
  • 1 teaspoon Coconut oil (optional, for toasting pecans)

Directions

Step 1

1. Chill the cans of coconut milk in the refrigerator for at least 4 hours (preferably overnight) to allow the cream to separate from the liquid.

Step 2

2. Toast the pecans: Heat a skillet over medium heat, add the pecans, and toast them for 3-5 minutes, stirring frequently. For extra flavor, you can add 1 teaspoon of coconut oil while toasting. When the pecans are fragrant and slightly darker, remove them from the heat and let them cool.

Step 3

3. In a high-speed blender or food processor, combine the chilled coconut milk (scoop out only the solid cream part), pitted Medjool dates, vanilla extract, and sea salt. Blend on high until the mixture is smooth and creamy.

Step 4

4. Roughly chop the toasted pecans and set aside a small handful for garnish, if desired. Stir the remaining pecans into the blended coconut milk mixture.

Step 5

5. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (this usually takes 20-25 minutes). If you don't have an ice cream maker, pour the mixture into a freezer-safe container, cover, and freeze. Every 30 minutes, stir the mixture vigorously with a fork to break up ice crystals until it reaches your desired consistency (about 3-4 hours total).

Step 6

6. Once the ice cream has churned or set, transfer it to a lidded container and freeze for an additional 1-2 hours to firm up.

Step 7

7. Serve the ice cream scooped into bowls. Garnish with the reserved toasted pecans, if desired. Enjoy!
