Ingredients

  • 4 cups fresh broccoli florets
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups shredded cheddar cheese
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream
  • 2 large eggs
  • 1 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1.5 cups (crushed) Ritz crackers
  • 4 tablespoons (melted) butter

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch casserole dish and set aside.

Step 2

Bring a large pot of salted water to a boil. Blanch the broccoli florets for 2-3 minutes until they are bright green and slightly tender. Drain and transfer the florets to a bowl of ice water to stop the cooking process. Drain again and set aside.

Step 3

In a large mixing bowl, combine the cream of mushroom soup, 1.5 cups of shredded cheddar cheese, mayonnaise, sour cream, eggs, onion powder, garlic powder, salt, and black pepper. Mix until smooth and well combined.

Step 4

Fold the blanched broccoli into the mixture, ensuring it is evenly coated.

Step 5

Pour the broccoli mixture into the prepared casserole dish and spread it out evenly.

Step 6

In a small bowl, combine the crushed Ritz crackers and melted butter. Stir until the crackers are evenly coated.

Step 7

Sprinkle the buttery cracker mixture evenly over the top of the casserole. Then, sprinkle the remaining 0.5 cup of shredded cheddar cheese on top.

Step 8

Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbling and the topping is golden brown.

Step 9

Remove from the oven and let it sit for 5 minutes before serving. Enjoy Maria's Holiday Broccoli Casserole with family and friends!
