Ingredients

  • 1 cup white rice
  • 2 cups water
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 4 large garlic cloves
  • 3 cups baby spinach leaves
  • 1 teaspoon soy sauce
  • 0.5 teaspoons black pepper

Directions

Step 1

Rinse the white rice thoroughly under cold water until the water runs clear. Set aside.

Step 2

In a medium saucepan, combine the rinsed rice, water, and 1/2 teaspoon of salt. Bring to a boil over medium heat.

Step 3

Once boiling, lower the heat to a simmer, cover the saucepan with a lid, and cook for 15 minutes or until the water is fully absorbed and the rice is tender. Remove from heat and let it rest, covered, for 5 minutes.

Step 4

While the rice is resting, finely mince the garlic cloves and set them aside.

Step 5

Heat a large skillet over medium heat and add the olive oil.

Step 6

Add the minced garlic to the skillet and sauté for 1-2 minutes, stirring frequently, until the garlic is golden and fragrant. Be careful not to burn it.

Step 7

Add the baby spinach leaves to the skillet and cook for 2-3 minutes, stirring frequently, until the spinach is wilted.

Step 8

Stir in the cooked rice, the remaining 1/2 teaspoon of salt, soy sauce, and black pepper. Toss everything together until well combined and heated through.

Step 9

Remove the skillet from the heat and adjust seasoning if needed. Serve immediately and enjoy your delicious Garlic Rice with Spinach!
