Ingredients

  • 3 pounds Chuck roast
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, sliced
  • 4 Garlic cloves, minced
  • 4 medium Carrots, peeled and cut into chunks
  • 1.5 pounds Baby potatoes, halved
  • 2 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Season the chuck roast on all sides with salt and black pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.

Transfer the seared roast to the crock pot.

In the same skillet, add the sliced onion and minced garlic. Sauté for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
