Preheat your oven to 425°F (220°C).
In a medium bowl, combine the granulated sugar, brown sugar, ground cinnamon, ground nutmeg, and salt. Set aside.
Peel, core, and slice the apples into 1/4-inch thin slices. Transfer the apple slices to a large mixing bowl.
Sprinkle the sugar-spice mixture and the flour over the sliced apples. Toss until the apples are evenly coated, then set aside.
Roll out one of the pie crusts and press it into a 9-inch pie dish, allowing the edges to hang slightly over the sides of the dish.
