Ingredients

  • 150 grams Granulated sugar
  • 100 grams Brown sugar
  • 2 teaspoons Ground cinnamon
  • 0.5 teaspoons Ground nutmeg
  • 0.25 teaspoons Salt
  • 6 large Apples (firm and tart, such as Granny Smith)
  • 2 tablespoons All-purpose flour
  • 60 grams Unsalted butter
  • 2 9-inch rounds Pie crust (store-bought or homemade)
  • 1 large Egg
  • 1 tablespoon Milk
  • 1 tablespoon Granulated sugar (for sprinkling)

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

In a medium bowl, combine the granulated sugar, brown sugar, ground cinnamon, ground nutmeg, and salt. Set aside.

Step 3

Peel, core, and slice the apples into 1/4-inch thin slices. Transfer the apple slices to a large mixing bowl.

Step 4

Sprinkle the sugar-spice mixture and the flour over the sliced apples. Toss until the apples are evenly coated, then set aside.

Step 5

Roll out one of the pie crusts and press it into a 9-inch pie dish, allowing the edges to hang slightly over the sides of the dish.

Step 6

Pour the apple mixture into the pie crust, layering the apples evenly.

Step 7

Dot the filling with small pieces of butter, evenly distributing them over the apples.

Step 8

Roll out the second pie crust and gently lay it over the apple filling. Press the edges of the top and bottom crusts together to seal, then crimp the edges as desired.

Step 9

Use a sharp knife to cut 4-6 small slits in the top crust to allow steam to escape during baking.

Step 10

In a small bowl, whisk together the egg and milk to make an egg wash. Lightly brush the egg wash over the top crust, then sprinkle with granulated sugar.

Step 11

Place the pie dish into a large paper bag, sealing it tightly. Fold the edge of the bag and staple or paper clip it shut (as an alternative, place the pie on a baking sheet and tent loosely with aluminum foil).

Step 12

Bake the pie in the preheated oven for 60 minutes, or until the crust is golden brown and the filling is bubbling.

Step 13

Carefully remove the pie from the bag or foil tent and let it cool on a wire rack for at least 2 hours before serving.

Step 14

Slice, serve, and enjoy!
