Prepare a baking sheet by lining it with parchment paper or a silicone baking mat. Set it aside.
In a medium microwave-safe bowl, melt 170 grams of the semi-sweet chocolate chips in 20-30 second intervals, stirring in between, until smooth and fully melted.
Add the butter to the melted chocolate and stir until completely incorporated. Next, mix in the sweetened condensed milk and vanilla extract until smooth and glossy.
Gradually add the confectioners' sugar to the chocolate mixture, stirring until a thick and pliable dough forms. If you’re adding coconut flakes or chopped nuts to the filling, fold them into the mixture now.
Scoop out small portions of the dough (approximately 1 tablespoon each) and roll them into smooth balls with your hands. Place each ball onto the prepared baking sheet. Once all the dough has been rolled, chill the balls in the refrigerator for 15-20 minutes to firm up.
While the bonbon centers are chilling, melt the remaining 170 grams of chocolate chips in a microwave-safe bowl in 20-30 second intervals, stirring in between, until fully melted and smooth.
Using a fork or dipping tool, carefully dip each bonbon center into the melted chocolate to coat it completely. Allow any excess chocolate to drip off, then place the coated bonbon back onto the lined baking sheet.
If desired, sprinkle the tops of the bonbons with decorative sprinkles before the chocolate sets.
Repeat the dipping process until all the bonbons are coated. Allow the chocolate coating to set completely at room temperature, or refrigerate for quicker results.
Once the chocolate has hardened, transfer the bonbons to an airtight container. Store in the refrigerator for up to 2 weeks. Serve chilled or at room temperature, and enjoy!
