Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon paprika
  • 1 teaspoon chives (optional, for garnish)

Directions

Step 1

Place the eggs in a single layer in a medium-sized saucepan. Add enough cold water to cover the eggs by about 1 inch.

Step 2

Bring the water to a boil over medium-high heat. Once boiling, immediately remove the pan from the heat and cover it with a lid. Let the eggs sit in the hot water for 10 minutes.

Step 3

Drain the hot water and transfer the eggs to a bowl of ice water. Let them cool for at least 5 minutes.

Peel the eggs carefully under running water to remove the shells. Pat them dry with a paper towel.

Slice each egg in half lengthwise and gently remove the yolks using a spoon. Place the yolks in a medium mixing bowl and set the egg whites aside on a serving platter.
