  • 2 stalks celery stalks, sliced
  • 3 medium russet potatoes, peeled and cubed
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

In a large bowl, combine the flour, salt, and black pepper. Dredge the beef cubes in the flour mixture until well coated.

Step 2

Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat. Working in batches, sear the beef cubes until browned on all sides, about 3-4 minutes per batch. Remove the beef and set aside.

In the same pot, add the diced onion and sauté until softened, about 5 minutes. Add the minced garlic and cook for another 1 minute until fragrant.
