Ingredients

  • 1.5 cups Heavy cream
  • 0.5 cups Granulated sugar
  • 8 ounces Cream cheese
  • 0.25 cups Lime juice
  • 1 tablespoon Lime zest
  • 2 tablespoons Tequila
  • 1 tablespoon Orange liqueur (such as Triple Sec)
  • 1 teaspoon Powdered gelatin
  • 2 tablespoons Water
  • 0.5 cups Crushed graham crackers (optional for garnish)
  • 1 teaspoon Extra lime zest (optional for garnish)

Directions

Step 1

In a small microwave-safe bowl, combine the powdered gelatin and water. Let the mixture bloom for 5 minutes.

Step 2

Microwave the gelatin mixture for about 10 seconds or until fully dissolved. Set it aside to cool slightly.

Step 3

In a large mixing bowl, beat the cream cheese and granulated sugar together using an electric mixer on medium speed until smooth and creamy.

Step 4

Add the lime juice, lime zest, tequila, orange liqueur, and the dissolved gelatin mixture to the cream cheese base. Mix until well combined.

Step 5

In a separate bowl, whip the heavy cream to stiff peaks using an electric mixer. Be careful not to overwhip.

Step 6

Gently fold the whipped cream into the cream cheese mixture in three additions, ensuring the mousse remains light and airy.

Step 7

Divide the mousse evenly into serving glasses or bowls. Cover and refrigerate for at least 2 hours to set.

Step 8

Before serving, optionally top with crushed graham crackers and extra lime zest for garnish.
