Ingredients

  • 500 grams button mushrooms
  • 1 large onion
  • 3 tablespoons butter
  • 2 cloves garlic
  • 1 cup breadcrumbs
  • 1.5 cups shredded cheddar cheese
  • 1 cup sour cream
  • 0.5 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean and slice the mushrooms thinly. Dice the onion and mince the garlic cloves.

Step 3

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat.

Step 4

Add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened.

Step 5

Add the minced garlic and cook for an additional minute until fragrant.

Step 6

Stir in the sliced mushrooms, cooking for 8-10 minutes, or until they release their moisture and become golden brown.

Step 7

Season the mushroom mixture with salt and black pepper. Turn off the heat and set aside.

Step 8

In a small saucepan, melt the remaining 1 tablespoon of butter. Add the breadcrumbs and stir until lightly toasted, about 2 minutes. Remove from heat.

Step 9

In a mixing bowl, combine the sour cream, heavy cream, and 1 cup of shredded cheddar cheese. Mix until smooth and creamy.

Step 10

In a greased 9x13-inch baking dish, spread the mushroom mixture evenly. Pour the sour cream and cheese mixture over the top, spreading it with a spatula to ensure even coverage.

Step 11

Sprinkle the toasted breadcrumbs and remaining 0.5 cup of shredded cheddar cheese evenly over the top.

Step 12

Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbling and golden brown on top.

Step 13

Remove the casserole from the oven and let it cool for 5 minutes. Garnish with chopped parsley before serving.
