Ingredients

  • 2.5 cups All-purpose flour
  • 2.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.75 cups Unsalted butter (softened)
  • 2 cups Granulated sugar
  • 6 large Egg whites (room temperature)
  • 2 teaspoons Pure vanilla extract
  • 1 cups Whole milk (room temperature)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans or line them with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to beat the unsalted butter until creamy, about 1-2 minutes.

Step 4

Gradually add the granulated sugar to the butter and beat on medium speed until light and fluffy, about 3-4 minutes.

Step 5

Add the egg whites to the butter mixture, one at a time, beating well after each addition.

Step 6

Mix in the vanilla extract until fully incorporated.

Step 7

Reduce the mixer speed to low and add the dry ingredients in three batches, alternating with the milk in two batches, beginning and ending with the dry ingredients. Mix just until combined. Do not overmix.

Step 8

Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

Step 9

Bake in the preheated oven for 28-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 10

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, carefully run a knife around the edges and invert them onto a wire rack to cool completely before frosting or serving.
