Ingredients

  • 1.5 lbs carrots
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 1.5 cups milk
  • 1 cup sharp cheddar cheese, shredded
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup breadcrumbs
  • 0.5 cup parmesan cheese, grated
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the carrots and slice them diagonally into 1/4-inch thick rounds.

Step 3

Bring a large pot of salted water to a boil. Add the carrots and cook for 5-7 minutes, until just tender but still slightly firm. Drain the carrots and set them aside.

Step 4

In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.

Step 5

Gradually whisk in the milk, ensuring no lumps form. Cook for 3-4 minutes, stirring frequently, until the sauce thickens.

Step 6

Remove the saucepan from heat and stir in the shredded cheddar cheese, salt, and black pepper until the cheese is fully melted and the sauce is smooth.

Step 7

In a greased 2-quart casserole dish, layer the cooked carrots evenly. Pour the cheese sauce over the carrots, spreading it out with a spatula to ensure an even coating.

Step 8

In a small bowl, combine the breadcrumbs, grated parmesan cheese, and olive oil. Mix until the breadcrumbs are evenly coated with the oil.

Step 9

Sprinkle the breadcrumb mixture over the top of the casserole.

Step 10

Bake in the preheated oven for 25-30 minutes, until the topping is golden brown and the casserole is bubbling around the edges.

Step 11

Remove from the oven and let cool for 5 minutes. Garnish with fresh parsley, if desired, before serving.
