  • 1 pound raw shrimp, peeled and deveined
  • 12 ounces andouille sausage, sliced
  • 3 cups cooked white rice
  • 2 bell pepper (mixed colors), diced
  • 2 celery stalks, diced
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 14.5 ounces diced tomatoes (canned, with juices)
  • 1 cup chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 tablespoons vegetable oil
  • 1.5 cups sharp cheddar cheese, shredded
  • 2 green onions, sliced (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat a large skillet over medium heat and add the vegetable oil.

Cook the sliced andouille sausage until browned, about 5 minutes. Transfer to a plate and set aside.

In the same skillet, add the diced bell peppers, celery, and onion. Sauté for 5-7 minutes until softened.
