Ingredients

  • 2 cups All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.25 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 0.5 cups Unsweetened applesauce
  • 0.25 cups Low-fat plain Greek yogurt
  • 0.25 cups Pure maple syrup
  • 1 teaspoons Vanilla extract
  • 0.5 cups Chopped walnuts
  • 1 large Egg white
  • 0 Optional: Additional chopped walnuts or a drizzle of maple syrup for topping

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

Step 3

In a separate bowl, mix the applesauce, Greek yogurt, maple syrup, and vanilla extract until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients and stir just until the dough begins to come together. Do not overmix.

Step 5

Gently fold in the chopped walnuts until evenly distributed.

Step 6

Lightly flour a clean work surface and turn the dough out onto it. Pat the dough into a 1-inch-thick round disk, about 8 inches in diameter.

Step 7

Use a floured knife or bench scraper to cut the disk into 8 equal wedges.

Step 8

Carefully transfer the wedges to the prepared baking sheet, spacing them slightly apart.

Step 9

In a small bowl, lightly beat the egg white and brush it over the tops of the scones for a shiny finish.

Step 10

Bake in the preheated oven for 13-15 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Step 11

Remove the scones from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Step 12

Optional: Sprinkle with additional chopped walnuts or drizzle with a small amount of maple syrup before serving. Enjoy!
