Ingredients

  • 2 whole sweet dumpling squash
  • 4 tablespoons unsalted butter
  • 3 tablespoons pure maple syrup
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 teaspoons olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Carefully slice each sweet dumpling squash in half. Scoop out the seeds and discard or save them for roasting.

Step 3

Brush the cut sides of the squash halves lightly with olive oil and place them cut-side down on the prepared baking sheet. Roast in the preheated oven for 20 minutes.

Step 4

While the squash is roasting, prepare the filling. In a small saucepan over low heat, melt the butter. Stir in the maple syrup, ground cinnamon, nutmeg, salt, and black pepper until well combined. Remove from heat and set aside.

Step 5

After 20 minutes, flip the squash halves cut-side up. Divide the maple butter mixture evenly among the squash halves, spooning it into the cavities.

Step 6

Return the squash to the oven and roast for an additional 20 minutes, or until the flesh is tender and caramelized around the edges.

Step 7

Remove the squash from the oven and let cool slightly before serving. Serve warm, with the melted maple butter spooned over the top and a sprinkle of cinnamon, if desired.
