Ingredients

  • 0.5 cup popcorn kernels
  • 2 tablespoons coconut oil (or any neutral oil)
  • 0.25 cup maple syrup
  • 2 tablespoons unsalted butter
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt

Directions

Step 1

Heat a large, heavy-bottomed pot over medium heat and add the coconut oil.

Step 2

Place 2-3 popcorn kernels in the oil and cover the pot. Wait for the kernels to pop, which indicates the oil is hot enough.

Step 3

Once the test kernels pop, add the remaining popcorn kernels in an even layer. Cover the pot with a lid, leaving a small gap for steam to escape.

Step 4

Shake the pot gently back and forth over the burner to prevent burning. Continue until popping slows to about 2-3 seconds between pops, then remove the pot from heat.

Step 5

Transfer the popped popcorn to a large mixing bowl, discarding any unpopped kernels.

Step 6

In a small saucepan, combine maple syrup, butter, and pumpkin pie spice. Heat the mixture over low-medium heat, stirring frequently, until the butter is melted and the mixture is smooth.

Step 7

Remove the saucepan from heat, then stir in the vanilla extract and salt.

Step 8

Pour the maple-pumpkin spice glaze over the popcorn in the large bowl. Toss the popcorn gently with a spatula or your hands to evenly coat each kernel.

Step 9

Spread the coated popcorn onto a parchment-lined baking sheet in a single layer. Let it cool for 5-10 minutes to allow the glaze to set.

Step 10

Once cooled, serve and enjoy! Store any leftovers in an airtight container at room temperature for up to 3 days.
