Ingredients

  • 1 cup Granulated sugar
  • 1 cup Brown sugar, packed
  • 1 cup Pure maple syrup
  • 1 cup Heavy cream
  • 4 tablespoons Unsalted butter
  • 2 cups Pecans, roughly chopped
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

Line a large baking sheet with parchment paper or a silicone baking mat and set it aside.

Step 2

In a heavy-bottomed saucepan, combine the granulated sugar, brown sugar, maple syrup, heavy cream, and butter.

Step 3

Heat the mixture over medium heat, stirring constantly, until the sugars dissolve and the butter melts completely.

Step 4

Attach a candy thermometer to the saucepan. Continue heating, stirring occasionally to prevent scorching, until the mixture reaches 235°F (soft-ball stage).

Step 5

Once the temperature is reached, immediately remove the pan from heat.

Step 6

Stir in the chopped pecans, vanilla extract, and salt. Keep stirring vigorously for 2-3 minutes until the mixture begins to thicken and becomes creamy.

Step 7

Working quickly, drop spoonfuls of the praline mixture onto the prepared baking sheet, creating individual clusters. Use a tablespoon-size scoop or two spoons for ease.

Step 8

Allow the pralines to cool and set completely at room temperature, about 30 minutes.

Step 9

Once set, store the pralines in an airtight container at room temperature for up to a week.
