Ingredients

  • 500 grams carrots
  • 2 tablespoons unsalted butter
  • 3 tablespoons maple syrup
  • 2 teaspoons Dijon mustard
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon fresh parsley (optional, for garnish)

Directions

Step 1

Peel the carrots and slice them diagonally into 1/4-inch thick rounds. For larger carrots, slice them in half lengthwise before cutting into rounds.

Step 2

Bring a large pot of salted water to a boil. Add the sliced carrots and cook for 5-7 minutes, or until they are just tender but still have some bite. Drain and set aside.

Step 3

In a large skillet, melt the unsalted butter over medium heat.

Step 4

Stir in the maple syrup and Dijon mustard, and mix until well combined.

Step 5

Add the cooked carrots to the skillet, tossing to coat them evenly with the maple mustard glaze. Cook for 3-5 minutes, stirring occasionally, until the glaze thickens slightly and clings to the carrots.

Step 6

Season with salt and black pepper to taste.

Step 7

Transfer the carrots to a serving bowl and garnish with chopped fresh parsley, if desired.

Step 8

Serve warm and enjoy!
