  • 4 large eggs Egg whites
  • 120 ml Pure maple syrup
  • 0.25 teaspoons Cream of tartar
  • 0.125 teaspoons Salt
  • 0.5 teaspoons Vanilla extract
  • 15 grams Powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 200°F (95°C) and line two baking sheets with parchment paper.

In a clean, dry mixing bowl, add the egg whites. Using a hand or stand mixer, whisk the egg whites on medium speed until they turn frothy.

Step 3

Add the cream of tartar and salt, then increase the speed to medium-high. Continue whisking until soft peaks form.

Slowly drizzle in the maple syrup, about 1 tablespoon at a time, while whisking. Once all the syrup has been added, increase the speed to high and whisk until stiff, glossy peaks form. This may take 5-7 minutes.
