Ingredients

  • 1 pound carrots
  • 2 whole leeks
  • 2 tablespoons unsalted butter
  • 3 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 teaspoon fresh thyme leaves
  • 0.25 cup water

Directions

Step 1

Peel the carrots and slice them diagonally into 1/4-inch thick rounds.

Step 2

Trim the root ends and dark green tops off the leeks, leaving the white and light green parts. Slice the leeks lengthwise, then crosswise into 1/4-inch half-moons. Rinse thoroughly to remove any dirt.

Step 3

In a large skillet, melt the butter with the olive oil over medium heat.

Step 4

Add the sliced leeks to the skillet and cook, stirring occasionally, for 5-7 minutes until softened and slightly golden.

Step 5

Stir in the carrots, salt, and black pepper, and cook for 2 minutes to begin softening the carrots.

Step 6

Add the water to the skillet and cover with a lid. Reduce the heat to medium-low and let the vegetables steam for 10-12 minutes, or until the carrots are tender and the water has mostly evaporated.

Step 7

Remove the lid and increase the heat to medium. Stir in the maple syrup and fresh thyme leaves.

Step 8

Cook for 3-4 minutes, stirring frequently, until the vegetables are glazed and slightly caramelized.

Step 9

Transfer the maple carrots and leeks to a serving dish and serve warm.
