Ingredients

  • 1.5 cups All-purpose flour
  • 1 tablespoon Granulated sugar
  • 2 teaspoons Baking powder
  • 0.25 teaspoon Salt
  • 1.25 cups Milk
  • 1 large Egg
  • 3 tablespoons Unsalted butter (melted)
  • 1 teaspoon Vanilla extract
  • 6 slices Bacon
  • 0.5 cup Maple syrup
  • 1 tablespoon Vegetable oil or butter (for greasing skillet)

Directions

Step 1

Begin by cooking the bacon. Heat a skillet over medium heat and cook the bacon slices until they are crispy. Transfer the cooked bacon to a paper towel-lined plate to drain. Once cooled, chop the bacon into small bits and set aside.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Step 3

In a separate bowl, combine the milk, large egg, melted butter, and vanilla extract. Whisk well until fully incorporated.

Step 4

Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; some small lumps are okay.

Step 5

Fold the chopped bacon pieces into the pancake batter, reserving a small handful for garnish, if desired.

Step 6

Heat a skillet or griddle over medium heat and lightly grease it with vegetable oil or butter.

Step 7

Scoop about 1/4 cup of batter onto the hot skillet for each pancake. Cook for 2–3 minutes, or until bubbles form on the surface of the pancake and the edges look set. Flip and cook for another 1–2 minutes, or until golden brown and cooked through.

Step 8

Repeat with the remaining batter, greasing the skillet as needed between batches.

Step 9

Serve the pancakes stacked on a plate, drizzled generously with maple syrup, and topped with the reserved bacon bits for garnish.
