Ingredients

  • 2 cups Long-grain white rice
  • 4 cups Water
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Cumin powder
  • 0.5 teaspoons Turmeric powder
  • 0.5 teaspoons Paprika
  • 1 medium Carrot, diced
  • 1 medium Bell pepper, diced
  • 0.5 cups Frozen peas
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Rinse the rice under cold running water until the water runs clear. Set aside to drain.

Step 2

In a medium-sized pot, heat olive oil over medium heat.

Step 3

Add the chopped onion and cook, stirring occasionally, for about 3 minutes, or until translucent.

Step 4

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 5

Add the cumin, turmeric, and paprika to the pot, and stir well to coat the onions and garlic in the spices.

Step 6

Add the diced carrot and bell pepper, and cook for 2-3 minutes until they begin to soften.

Step 7

Add the rinsed rice to the pot and stir to coat the grains with the oil and spices.

Step 8

Pour in the water, then add the salt and black pepper. Stir well and bring the mixture to a boil.

Step 9

Once the water is boiling, reduce the heat to low and cover the pot with a tight-fitting lid.

Step 10

Simmer on low heat for 15-18 minutes, or until the rice is tender and the water has been absorbed.

Step 11

Remove the pot from the heat and let it sit, covered, for 5 minutes to allow the rice to fluff up.

Step 12

Gently fold in the frozen peas, letting their residual heat warm them through.

Step 13

Taste the rice and adjust the seasoning with additional salt and pepper, if needed.

Step 14

Sprinkle the chopped cilantro over the top as a fresh garnish before serving.

Step 15

Serve hot and enjoy your delicious Manuel's Rice with your favorite protein or as a standalone dish.
