Ingredients

  • 4 pieces Bone-in pork chops
  • 4 medium Yellow potatoes
  • 1 large Onion
  • 3 small Garlic cloves
  • 3 tablespoons Dijon mustard
  • 2 tablespoons Whole-grain mustard
  • 1.5 cups Chicken broth
  • 0.5 cups Heavy cream
  • 2 tablespoons Olive oil
  • 2 tablespoons Flour
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoons Pepper
  • 2 tablespoons Fresh parsley (for garnish)

Directions

Step 1

Season both sides of the pork chops with paprika, salt, and pepper.

Step 2

Heat the olive oil in a skillet over medium-high heat. Sear the pork chops for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.

Step 3

Peel the yellow potatoes and cut them into large chunks. Slice the onion thinly and mince the garlic cloves.

Step 4

In the same skillet, add the sliced onions and garlic. Sauté for 2-3 minutes until aromatic, scraping any browned bits from the bottom of the pan.

Step 5

Whisk together the Dijon mustard, whole-grain mustard, chicken broth, and heavy cream in a bowl until smooth. Stir in the flour to thicken the sauce.

Step 6

Layer the potatoes at the bottom of a crock pot. Sprinkle lightly with salt and pepper.

Step 7

Place the seared pork chops on top of the potatoes in the crock pot.

Step 8

Pour the sautéed onions, garlic, and mustard sauce over the pork chops and potatoes, ensuring everything is coated evenly.

Step 9

Cover and cook on LOW heat for 6 hours, or until the pork is tender and the potatoes are cooked through.

Step 10

Before serving, garnish with fresh parsley for a pop of color and added freshness.

Step 11

Serve with a green salad or roasted vegetables for a complete meal.
