Ingredients

  • 2 large ripe mangoes
  • 50 grams granulated sugar
  • 250 ml heavy whipping cream
  • 1 tablespoon unflavored gelatin
  • 3 tablespoons water
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Directions

Step 1

Peel the mangoes and cut the flesh away from the pit. Chop the mango flesh and blend it in a blender until smooth to obtain around 1 and 1/2 cups of mango puree.

In a small bowl, add the gelatin and 3 tablespoons of water. Stir gently and let it sit for about 5 minutes to bloom.

In a small saucepan, gently heat the bloomed gelatin over low heat until completely dissolved. Do not let it boil. Remove from heat and let it cool slightly.
