Ingredients

  • 1 whole Ripe mango
  • 2 whole Ripe banana
  • 8 pieces Spring roll wrappers
  • 0.5 teaspoons Cinnamon powder
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 2 cups Oil for frying

Directions

Step 1

Peel and dice the mango into small cubes.

Step 2

Peel and slice the bananas into thin slices.

Step 3

In a small bowl, mix the cinnamon powder and granulated sugar.

Step 4

Lay out one spring roll wrapper on a dry surface, placing a corner pointing towards you to form a diamond shape.

Step 5

Place 2-3 pieces of mango and 2 slices of banana near the center of the wrapper. Sprinkle a small pinch of the cinnamon-sugar mixture over the fruit.

Step 6

In a separate small bowl, make a cornstarch slurry by mixing the cornstarch and water until smooth. This will be your sealing glue for the wrappers.

Step 7

Fold the bottom corner of the wrapper over the fruit, then fold in the two sides to create an envelope shape. Roll tightly, applying the cornstarch slurry on the top corner to seal the roll. Repeat with the remaining wrappers and filling.

Step 8

Heat oil in a deep frying pan to 350°F (175°C). Fry the spring rolls in small batches for 2-3 minutes each, or until they are golden brown and crispy. Transfer to a plate lined with paper towels to drain excess oil.
