Ingredients

  • 200 grams Raclette cheese
  • 200 grams Gruyère cheese
  • 250 milliliters Dry white wine
  • 1 whole Garlic clove
  • 1 tablespoon Cornstarch
  • 1 teaspoon Lemon juice
  • 1 tablespoon Kirsch (cherry brandy, optional)
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Ground nutmeg

Directions

Step 1

Grate the Raclette and Gruyère cheese into a large bowl and toss with cornstarch. Set aside.

Step 2

Cut the garlic clove in half and rub the inside of a heavy-bottomed fondue pot or saucepan with the cut side of the garlic. Discard the garlic pieces.

Step 3

Pour the white wine and lemon juice into the pot and heat over medium heat until warm but not boiling.

Step 4

Gradually add the cheese mixture to the pot, stirring constantly in a figure-eight motion with a wooden spoon until the cheese is completely melted and smooth.

Step 5

If using, stir in the Kirsch for added flavor.

Step 6

Season with ground black pepper and nutmeg to taste.

Step 7

Reduce the heat to low to keep the fondue warm and smooth. Serve immediately with bread cubes, roasted potatoes, steamed vegetables, or charcuterie for dipping.
