Preheat your oven to 180°C (356°F) and line two baking sheets with parchment paper.
In a mixing bowl, cream together the butter, granulated sugar, and vanilla sugar (or extract) using an electric mixer until light and fluffy.
Add the eggs one at a time, beating well after each addition to ensure they are fully incorporated.
In a separate bowl, combine the all-purpose flour, baking powder, and ground almonds. Gradually add the dry ingredients to the wet mixture, mixing until a smooth dough forms. If the dough is too stiff, add 1 tablespoon of milk to soften it slightly.
Fit a star-shaped piping tip into a piping bag and fill it with the dough. Pipe long strips, S-shapes, or other festive patterns onto the prepared baking sheets. Leave a small amount of space between each cookie as they will spread slightly during baking.
Bake in the preheated oven for 10–12 minutes, or until the edges are just beginning to turn golden. Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
If desired, melt the dark chocolate in a heatproof bowl over simmering water (or in the microwave in short bursts). Dip the cooled cookies halfway into the melted chocolate and place them on parchment paper until the chocolate sets.
