  • 0.5 cup Orange juice
  • 2 tbsp Low-sodium soy sauce
  • 2 tbsp Honey
  • 2 Garlic cloves (minced)
  • 1 tsp Fresh ginger (grated)
  • 2 Mandarin oranges (peeled and segmented)
  • 2 Scallions (chopped for garnish)
  • 1 cup Wild rice blend
  • 2 cups Water or chicken broth
  • 1 tbsp Butter
  • 2 tbsp Fresh parsley (chopped for garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Season the pork tenderloin with salt and black pepper on all sides.

Step 3

In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the pork tenderloin until golden brown on all sides, about 3-4 minutes per side.

In a small bowl, whisk together orange juice, soy sauce, honey, minced garlic, and grated ginger to create the glaze.

Pour the glaze over the pork in the skillet. Add the mandarin orange segments around the pork.
