Ingredients

  • 1 lb Large shrimp, peeled and deveined
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 6 cups Mixed salad greens
  • 1 cup Mandarin oranges, drained (if canned) or peeled and segmented (if fresh)
  • 1 Cucumber, thinly sliced
  • 0.25 cup Red onion, thinly sliced
  • 0.25 cup Slivered almonds, toasted
  • 3 tbsp Orange juice
  • 1 tbsp Honey
  • 1 tsp Dijon mustard
  • 1 tbsp Apple cider vinegar
  • 1 clove Garlic, minced
  • 3 tbsp Olive oil (for dressing)

Directions

Step 1

Season the shrimp with salt and black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp and cook for about 2 minutes on each side, or until they are pink and opaque. Remove from heat and let cool slightly.

Step 3

In a large salad bowl, combine the mixed salad greens, mandarin oranges, cucumber slices, red onion, and toasted slivered almonds.
