Ingredients

  • 1.5 pounds Ground beef
  • 1 cup Mandarin oranges (canned in juice, drained, and chopped)
  • 0.75 cup Panko breadcrumbs
  • 0.25 cup Milk
  • 2 large Eggs
  • 2 tablespoons Soy sauce
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Fresh ginger (grated)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Hoison sauce (for glaze)
  • 2 tablespoons Mandarin juice (reserved from canned oranges)
  • 1 tablespoon Brown sugar

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper or lightly grease it with non-stick spray.

Step 2

In a large bowl, combine the ground beef, chopped mandarin oranges, panko breadcrumbs, milk, eggs, soy sauce, garlic powder, onion powder, grated ginger, salt, and black pepper.

Step 3

Mix the ingredients thoroughly using your hands or a sturdy spoon until fully combined, but do not overmix as this can make the meatloaf dense.

Step 4

Shape the mixture into a loaf (if using a baking sheet) or transfer it into the prepared loaf pan, pressing down gently to remove any air pockets.

Step 5

In a small bowl, mix the hoisin sauce, reserved mandarin juice, and brown sugar to create a glaze. Stir until smooth and set aside.

Step 6

Spread half of the prepared glaze evenly over the top of the meatloaf.

Step 7

Place the meatloaf in the preheated oven and bake for 45 minutes.

Step 8

Remove the meatloaf from the oven and spread the remaining glaze over the top. Return to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).

Step 9

Remove from the oven and let the meatloaf rest for 10 minutes before slicing and serving.

Step 10

Garnish with additional mandarin slices or chopped green onions, if desired. Serve with rice or steamed vegetables for a balanced meal.
