Ingredients

  • 4 medium-sized beets
  • 2 whole mandarin oranges
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 teaspoon mandarin zest

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the beets thoroughly and trim off the greens, leaving about 1 inch of the stems attached.

Step 3

Wrap each beet individually in aluminum foil and place them on a baking sheet.

Step 4

Roast the beets in the preheated oven for 45-60 minutes, or until they can be easily pierced with a knife.

Step 5

While the beets are roasting, zest one mandarin orange and set the zest aside.

Step 6

Juice both mandarin oranges into a small bowl and combine the juice with honey, apple cider vinegar, olive oil, fresh thyme, salt, and black pepper. Mix well to form the glaze.

Step 7

Once the beets are roasted, remove them from the oven and allow them to cool for about 10 minutes.

Step 8

Using a paper towel, rub the skins off the beets. They should slip off easily. Cut the beets into wedges or slices, depending on your preference.

Step 9

In a large skillet over medium heat, add the prepared mandarin glaze and bring it to a gentle simmer.

Step 10

Add the beet slices or wedges to the skillet and toss them gently in the glaze until they are fully coated and warmed through, about 3-5 minutes.

Step 11

Transfer the glazed beets to a serving dish, sprinkle with mandarin zest, and serve warm or at room temperature.
