Ingredients

  • 6 pieces Roma tomatoes
  • 2 pieces Jalapeño peppers
  • 0.5 pieces Red onion
  • 2 pieces Garlic cloves
  • 0.5 cups Cilantro
  • 1 piece Lime
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground cumin
  • 0.5 teaspoons Sugar
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat a skillet or grill pan over medium heat.

Step 2

Slice the Roma tomatoes and jalapeño peppers in half lengthwise and place them cut-side down in the heated skillet. Roast them for 3-5 minutes until they develop a slight char. Remove from heat and let cool.

Step 3

Meanwhile, finely chop half of a red onion, and set aside.

Step 4

Peel the garlic cloves and roughly chop them.

Step 5

In a food processor or blender, add the roasted tomatoes, roasted jalapeños, chopped onion, garlic, and cilantro.

Step 6

Juice the lime and add the fresh lime juice to the mixture in the food processor.

Step 7

Sprinkle in the salt, ground cumin, and sugar, then drizzle in the olive oil.

Step 8

Pulse the food processor a few times until the salsa reaches your desired consistency—you can make it chunky or smooth depending on your preference.

Step 9

Taste and adjust seasoning if necessary, adding more salt or lime juice as needed.

Step 10

Transfer the salsa to a bowl and let it chill in the refrigerator for at least 15-20 minutes to allow the flavors to meld together.

Step 11

Serve with tortilla chips, tacos, or your favorite Mexican-inspired dishes. Enjoy!
