Ingredients

  • 3 cups All-purpose flour
  • 1 tablespoon Active dry yeast
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 1.25 cups Warm water
  • 2 tablespoons Olive oil (for dough)
  • 0.5 cup Za'atar spice blend
  • 0.33 cup Olive oil (for topping)

Directions

Step 1

In a small bowl, combine the warm water, active dry yeast, and sugar. Stir gently and let it sit for 5-10 minutes until it becomes frothy, indicating the yeast is activated.

Step 2

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and 2 tablespoons of olive oil.

Step 3

Knead the dough by hand or with a stand mixer (using a dough hook) for about 8-10 minutes, until it’s soft and elastic. If the dough feels too sticky, add a tablespoon of flour at a time until manageable.

Step 4

Shape the dough into a ball and place it in a lightly oiled bowl. Cover with a clean kitchen towel and let it rise in a warm spot for 1 hour, or until it has doubled in size.

Step 5

Preheat your oven to 475°F (245°C). Line a baking sheet with parchment paper or preheat a pizza stone if you have one.

Step 6

Punch the risen dough down and divide it into 6 equal pieces. Roll each piece into a thin, circular flatbread about 8-9 inches in diameter.

Step 7

In a small bowl, mix the za'atar spice blend with the 1/3 cup of olive oil to create a spreadable paste.

Step 8

Place the rolled-out dough circles onto the prepared baking sheet or pizza stone. Spread an even layer of the za'atar mixture onto each flatbread, leaving a small border around the edges.

Step 9

Bake the flatbreads in the preheated oven for 10-12 minutes, or until the edges are golden brown and the bread is cooked through.

Step 10

Remove from the oven and let cool slightly before serving. Enjoy warm or at room temperature!
