Ingredients

  • 2 pounds ground beef (preferably 80% lean)
  • 0.5 pounds ground pork
  • 1 medium onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 1 cup panko breadcrumbs
  • 0.5 cup milk
  • 2 large egg
  • 2 tablespoons Worcestershire sauce
  • 0.5 cup ketchup
  • 2 tablespoons parsley, chopped
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons brown sugar
  • 0.5 cup ketchup (for glaze)
  • 1 tablespoon dijon mustard (for glaze)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with foil or parchment paper.

Step 2

In a small bowl, combine the milk and panko breadcrumbs. Mix well and set aside to soak for 5 minutes.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, finely chopped onion, minced garlic, soaked breadcrumbs, eggs, Worcestershire sauce, ketchup, parsley, salt, black pepper, and paprika.

Step 4

Use your hands or a sturdy spoon to mix the ingredients until just combined. Be careful not to overmix, as this can result in a tougher meatloaf.

Step 5

Transfer the meat mixture to the prepared baking sheet and shape it into a loaf about 9 inches long and 4-5 inches wide.

Step 6

In a small bowl, whisk together the brown sugar, ketchup, and Dijon mustard to create the glaze.

Step 7

Spread half of the glaze evenly over the top and sides of the meatloaf.

Step 8

Place the meatloaf in the oven and bake for 45 minutes.

Step 9

Remove the meatloaf from the oven and spread the remaining glaze on top.

Step 10

Return the meatloaf to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (70°C).

Step 11

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

Step 12

Serve hot with your favorite sides, such as mashed potatoes or roasted vegetables.
