Ingredients

  • 1 cup All-purpose flour
  • 1.5 cups Corn kernels (fresh, canned, or frozen)
  • 1 teaspoon Baking powder
  • 1 tablespoon Granulated sugar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 large Egg
  • 0.5 cup Whole milk
  • 2 tablespoons Unsalted butter (melted and slightly cooled)
  • 0.5 cup Vegetable oil (for frying)
  • 2 tablespoons Chopped green onions (optional)

Directions

Step 1

In a medium-sized mixing bowl, combine the flour, baking powder, sugar, salt, and black pepper. Whisk together to evenly distribute the dry ingredients.

Step 2

In a separate bowl, lightly beat the egg, then whisk in the milk and melted butter until well combined.

Step 3

Pour the wet ingredients into the bowl of dry ingredients and stir until just combined. Be careful not to overmix, as this can make the fritters tough.

Step 4

Gently fold in the corn kernels and green onions (if using) until evenly distributed throughout the batter.

Step 5

Heat the vegetable oil in a large skillet over medium heat. The oil should be hot but not smoking (about 350°F).

Step 6

Scoop about 2 tablespoons of batter per fritter and carefully drop it into the skillet, using the back of the spoon to flatten it slightly. You can fry multiple fritters at once, but make sure not to overcrowd the pan.

Step 7

Cook each fritter for about 2-3 minutes on one side, or until golden brown and crisp. Carefully flip and cook the other side for another 2-3 minutes.

Step 8

Remove the cooked fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil.

Step 9

Repeat with the remaining batter, adding more oil to the skillet if necessary.

Step 10

Serve the corn fritters warm as a side dish, appetizer, or snack. They pair wonderfully with sour cream, honey, or a spicy dipping sauce.
