Ingredients

  • 1 cup Blanched almonds
  • 2 slices Day-old bread (crust removed)
  • 2 small Garlic cloves
  • 1 cup White grapes
  • 1 medium Cucumber (peeled, seeded, and chopped)
  • 0.25 cup Extra virgin olive oil
  • 2 tablespoons White wine vinegar
  • 1.5 cups Ice-cold water
  • 1 teaspoon Salt
  • 0.25 teaspoon Ground white pepper
  • 0.5 cup Seedless green grapes (halved, for garnish)
  • 2 tablespoons Sliced almonds (toasted, for garnish)
  • 1 tablespoon Extra virgin olive oil (for drizzling)

Directions

Step 1

Place the blanched almonds in a blender or food processor and pulse until they are finely ground.

Step 2

Tear the day-old bread into small pieces and soak it in a small bowl of cold water for 2-3 minutes. Squeeze out excess water and add the bread to the blender.

Step 3

Add the garlic cloves, white grapes, chopped cucumber, olive oil, white wine vinegar, ice-cold water, salt, and ground white pepper to the blender.

Step 4

Blend the mixture on high speed until smooth and creamy. If the soup seems too thick, add a little more cold water, one tablespoon at a time, until the desired consistency is reached.

Step 5

Taste and adjust seasoning with additional salt or vinegar if needed.

Step 6

Transfer the soup to a large bowl or container and chill in the refrigerator for at least 2 hours to allow the flavors to meld.

Step 7

Before serving, stir the soup well. Divide into bowls and garnish each with halved green grapes, toasted sliced almonds, and a gentle drizzle of extra virgin olive oil.

Step 8

Serve cold and enjoy the refreshing flavors of this elegant white gazpacho!
