Ingredients

  • 3 cups Cooked chicken (shredded or diced)
  • 2 cups Chicken broth
  • 4 tablespoons Unsalted butter
  • 0.25 cup All-purpose flour
  • 1 cup Heavy cream
  • 1 cup Frozen peas and carrots
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Dried thyme
  • 2 pieces Refrigerated pie crusts (unbaked)
  • 1 piece Egg (beaten, for egg wash)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large saucepan, melt the butter over medium heat.

Step 3

Whisk in the flour and cook for 1-2 minutes until it forms a golden paste.

Step 4

Gradually whisk in the chicken broth and heavy cream, stirring constantly to form a smooth gravy. Cook for 3-4 minutes until thickened.

Step 5

Stir in the shredded chicken, frozen peas and carrots, salt, black pepper, and dried thyme. Mix well and remove from heat.

Step 6

Unroll one pie crust and fit it into a 9-inch pie dish, trimming any excess dough that hangs over the edges.

Step 7

Pour the chicken and vegetable filling into the pie crust, spreading evenly.

Step 8

Place the second pie crust over the filling. Seal the edges by pinching or crimping with a fork. Trim any extra dough.

Step 9

Cut a few small slits in the top of the pie crust to allow steam to escape.

Step 10

Brush the top crust with the beaten egg to ensure a golden finish.

Step 11

Place the pie dish on a baking sheet to catch any spills, and bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.

Step 12

Allow the pie to cool for 10 minutes before slicing and serving.
