  • 1.5 cups (fresh, frozen, or canned) corn kernels
  • 1 14-ounce can (with juices) diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 2 cups (crushed) tortilla chips
  • 0.25 cup (chopped, optional garnish) cilantro
  • 0.5 cup (optional for serving) sour cream

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch casserole dish.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
