Ingredients

  • 2 pounds ground beef or ground turkey
  • 1 large onion, diced
  • 1 medium bell pepper, diced
  • 3 cloves garlic, minced
  • 28 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 1 cup beef broth or water
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Heat the olive oil in a large skillet over medium heat. Add the ground beef (or turkey) and cook until browned, breaking up the meat as it cooks. Drain any excess grease and transfer the cooked meat to a crock pot or a large pot, if cooking on the stove.

Step 2

In the same skillet, add the diced onion, bell pepper, and minced garlic. Sauté for 3-5 minutes, or until the vegetables are softened. Transfer these to the crock pot or the pot on the stove.

Add the canned diced tomatoes, tomato sauce, kidney beans, black beans, and beef broth (or water) to the pot.
