Ingredients

  • 1.5 cups long-grain white rice
  • 3 cups chicken broth
  • 14.5 ounces diced tomatoes (canned)
  • 4 slices smoked bacon
  • 1 medium yellow onion
  • 1 medium green bell pepper
  • 1 large celery stalk
  • 2 large clove garlic
  • 1 tablespoon vegetable oil
  • 1 teaspoon kosher salt
  • 0.5 teaspoons ground black pepper
  • 1 teaspoon ground paprika
  • 1 teaspoon sugar

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Set aside to drain.

Step 2

Dice the bacon into small pieces. In a large, heavy-bottom skillet or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.

Step 3

While the bacon cooks, finely chop the onion, green bell pepper, and celery. Mince the garlic.

Step 4

Add the vegetable oil to the skillet with the bacon fat, then add the onion, bell pepper, and celery. Sauté over medium heat for 5-7 minutes, stirring occasionally, until the vegetables are softened and slightly browned.

Step 5

Stir in the minced garlic, kosher salt, black pepper, paprika, and sugar. Cook for 1-2 minutes until the garlic is fragrant.

Step 6

Add the drained rice to the skillet. Stir to coat the rice in the vegetable mixture, allowing it to toast slightly for 2-3 minutes.

Step 7

Pour in the chicken broth and the entire can of diced tomatoes (including the juice). Stir to combine and bring the mixture to a boil.

Step 8

Once boiling, reduce the heat to low, cover the skillet with a tight-fitting lid, and let it simmer for 20 minutes without uncovering or stirring.

Step 9

After 20 minutes, remove the lid and fluff the rice gently with a fork. Taste and adjust seasoning if needed.

Step 10

Garnish with the reserved crispy bacon pieces and serve warm. Enjoy Mama Ruth's Red Rice as a comforting side dish or a main course!
