Ingredients

  • 4 pieces Large flour tortillas
  • 1 cup Roasted green chiles (chopped)
  • 2 cups Shredded Monterey Jack cheese
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Butter
  • 2 tablespoons Fresh cilantro (optional, chopped)
  • 0.5 cup Sour cream (for serving)
  • 0.5 cup Salsa (for serving)

Directions

Step 1

Prepare all ingredients by shredding the cheeses, chopping the roasted green chiles, and optionally chopping fresh cilantro.

Step 2

Heat a large skillet or griddle over medium heat.

Step 3

Lightly butter one side of each tortilla. Place one tortilla, buttered side down, onto the skillet.

Step 4

Sprinkle 1/2 cup of Monterey Jack cheese and 1/4 cup of cheddar cheese evenly across the tortilla.

Step 5

Add 1/4 cup of chopped roasted green chiles on top of the cheeses.

Step 6

Optionally sprinkle with 1/2 tablespoon of cilantro for extra flavor.

Place a second tortilla on top, buttered side facing up.
