  • 1 can canned kidney beans, drained and rinsed (15 oz)
  • 1 can canned black beans, drained and rinsed (15 oz)
  • 2 tablespoons tomato paste
  • 1 cup beef broth (can substitute chicken or vegetable broth)
  • 1 whole bay leaf
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)
  • 0.5 cup shredded cheddar cheese (optional)
  • 0.25 cup sour cream (optional)
  • 2 tablespoons green onions, sliced (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the diced onion and green bell pepper, and sauté for 5 minutes, until softened.
