Ingredients

  • 2 hearts Romaine lettuce
  • 3 cups Day-old bread
  • 5 tablespoons Olive oil
  • 2 whole Garlic cloves
  • 1 cup Mayonnaise
  • 3 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 0.5 cups Parmesan cheese
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 whole Anchovy fillets (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the day-old bread into 1-inch cubes and place them in a mixing bowl.

Step 3

Drizzle 3 tablespoons of olive oil over the bread cubes and toss until evenly coated.

Step 4

Spread the bread cubes on a baking sheet and bake for 8-10 minutes, or until golden and crisp. Set aside to cool.

Step 5

Peel the garlic cloves and finely mince one; leave the other whole for later.

Step 6

In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, the minced garlic, and anchovy fillets (if using) until smooth and well-combined.

Step 7

Gradually add the remaining 2 tablespoons of olive oil into the dressing while whisking to achieve a creamy texture.

Step 8

Season the dressing with salt and black pepper to taste.

Step 9

Wash and dry the Romaine lettuce hearts thoroughly. Tear the leaves into bite-sized pieces and place them in a large salad bowl.

Step 10

Rub the inside of the salad bowl (if wooden) with the remaining whole garlic clove to enhance the flavor.

Step 11

Add the baked croutons and half of the Parmesan cheese to the salad bowl with the lettuce.

Step 12

Pour the dressing over the salad and toss gently to coat all the ingredients evenly.

Step 13

Sprinkle the remaining Parmesan cheese on top as garnish and serve immediately.
