Ingredients

  • 4 cups broccoli florets
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup mayonnaise
  • 2 cups shredded cheddar cheese
  • 2 large eggs
  • 0.5 cup onion, finely diced
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1.5 cups Ritz crackers, crushed
  • 4 tablespoons butter, melted

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish and set aside.

Step 2

Bring a large pot of lightly salted water to a boil. Add the broccoli florets and cook for 2–3 minutes, just until they turn bright green and slightly tender. Drain and set aside.

Step 3

In a large mixing bowl, combine the cream of mushroom soup, mayonnaise, 1.5 cups of the shredded cheddar cheese, eggs, diced onion, salt, and black pepper. Mix until thoroughly blended.

Step 4

Fold the cooked broccoli into the soup mixture until evenly coated.

Step 5

Pour the broccoli mixture into the prepared casserole dish and spread it out evenly.

Step 6

Sprinkle the remaining 0.5 cup of shredded cheddar cheese evenly over the top.

Step 7

In a small bowl, combine the crushed Ritz crackers with the melted butter. Stir until the crackers are well coated.

Step 8

Sprinkle the buttered cracker topping evenly over the casserole.

Step 9

Bake in the preheated oven for 25–30 minutes, or until the casserole is bubbly and the cracker topping is golden brown.

Step 10

Let the casserole rest for 5 minutes before serving. Enjoy!
