Ingredients

  • 4 medium sweet potatoes
  • 1 cup coconut milk
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 teaspoon lime zest
  • 2 tablespoons lime juice
  • 2 tablespoons unsalted butter
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground allspice
  • 2 tablespoons toasted coconut flakes
  • 1 tablespoon chopped fresh cilantro

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and peel the sweet potatoes, then cut them into 1-inch thick cubes for even cooking.

Step 3

In a large pot of boiling salted water, cook the sweet potato cubes for 10-12 minutes or until just tender (but not falling apart). Drain well and set aside.

Step 4

In a small saucepan over medium heat, combine the coconut milk, brown sugar, cinnamon, nutmeg, lime zest, lime juice, butter, salt, and ground allspice. Cook for 3-4 minutes while stirring until the butter melts and the sugar dissolves. Remove from heat.

Step 5

In a large mixing bowl, toss the cooked sweet potato cubes with the prepared coconut milk mixture until evenly coated.

Step 6

Transfer the sweet potato mixture to a greased baking dish and spread it out evenly.

Step 7

Bake in the preheated oven for 20-25 minutes, or until the edges begin to caramelize and the sweet potatoes are tender and golden.

Step 8

Remove the dish from the oven and let it cool for 5 minutes.

Step 9

Sprinkle the toasted coconut flakes and chopped cilantro on top for a burst of texture and flavor.

Step 10

Serve warm as a delightful side dish that pairs perfectly with grilled meats, fish, or a tropical-inspired feast.
