Ingredients

  • 1 pound beef sirloin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 8 ounces cremini mushrooms, sliced
  • 2 cups beef broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 cup sour cream
  • 12 ounces egg noodles
  • 2 tablespoons parsley, chopped (optional, for garnish)

Directions

Step 1

Slice the beef sirloin into thin strips about 2 inches long. Season with salt and black pepper, then dust with the all-purpose flour to coat lightly.

Step 2

In a large skillet, heat 1 tablespoon of butter and the olive oil over medium-high heat. Add the beef in batches, searing on both sides until browned but not fully cooked through (about 2 minutes per side). Remove the beef and set aside.

Step 3

Reduce the heat to medium and add the remaining tablespoon of butter to the skillet. Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the sliced mushrooms to the skillet and sauté until they release their liquid and become golden brown, about 5-6 minutes.

Step 5

Pour in the beef broth, Dijon mustard, and Worcestershire sauce. Stir well to combine and bring to a simmer. Allow the sauce to cook for 5 minutes to slightly reduce.

Step 6

Lower the heat and stir in the sour cream, mixing until smooth. Do not let the sauce boil, as this may cause it to curdle.

Step 7

Return the beef to the skillet and cook gently in the sauce for 2-3 minutes, just until warmed through and tender.

Step 8

While the sauce is simmering, cook the egg noodles according to the package instructions until al dente. Drain and set aside.

Step 9

Serve the beef stroganoff over the egg noodles. Garnish with chopped parsley if desired. Enjoy your delicious homemade meal!
