  • 0 to taste hot sauce (optional)

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Step 2

Add the sliced andouille sausage and cook for 5-6 minutes until browned. Remove and set aside.

Step 3

In the same pot, add the chicken pieces and cook until lightly browned, about 5 minutes. Remove and set aside with the sausage.

Step 4

Reduce heat to medium and add the diced onion, bell pepper, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until softened.

Step 5

Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 6

Stir in the diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, smoked paprika, and bay leaves. Mix well.

Step 7

Return the sausage and chicken to the pot, ensuring they are evenly distributed. Bring the mixture to a boil.

Step 8

Reduce heat to low, cover the pot, and simmer for 20-25 minutes, stirring occasionally, until the rice is tender and has absorbed most of the liquid.

Step 9

Add the shrimp to the pot, stirring gently to combine. Cover and cook for an additional 5-7 minutes, or until the shrimp are pink and fully cooked.

Step 10

Remove the bay leaves and season the jambalaya with salt, black pepper, and hot sauce to taste.

Step 11

Garnish with chopped green onions and parsley before serving. Serve hot and enjoy!
