Ingredients

  • 1 cup (shredded) carrots
  • 1 cup (shredded) zucchini
  • 1 cup (finely chopped) button mushrooms
  • 0.5 cup (finely diced) onion
  • 2 cloves (minced) garlic
  • 1 cup breadcrumbs
  • 0.25 cup all-purpose flour
  • 1 large egg
  • 1.5 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon (or to taste) salt
  • 0.5 teaspoon (freshly ground) black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Start by preparing all the vegetables: shred the carrots and zucchini, finely chop the mushrooms, and dice the onion. Mince the garlic.

Step 2

In a large mixing bowl, combine the shredded carrots, zucchini, mushrooms, onion, and minced garlic. Mix well.

Step 3

Add the breadcrumbs, flour, egg, soy sauce, and Worcestershire sauce to the bowl. Sprinkle in the paprika, dried oregano, salt, and pepper. Mix everything together until it forms a cohesive mixture.

Step 4

Divide the mixture into 4 equal portions and shape each into a patty, ensuring the edges are well-rounded and the thickness is uniform.

Step 5

Heat a large skillet over medium heat and add the olive oil. Once the oil is hot, carefully place the vegetable patties into the skillet.

Step 6

Cook the patties for about 6–8 minutes on each side, or until they are golden brown and cooked through. Flip gently to ensure they do not break apart.

Step 7

Once cooked, remove the patties from the skillet and let them rest for 2–3 minutes.

Step 8

Serve the vegetable steaks warm, either on their own or with your favorite side dishes such as mashed potatoes, steamed vegetables, or a green salad.
